Black Sesame Vegan Banana Bread

Do you ever have too-ripe bananas lying around (raising hand, this is us every two weeks!). You debate whether it’s worth eating that really black, mushy banana (no thanks), or whether you should make something with it. If you have some Whisk’d Pancake Mix on hand, you can use that and the old bananas to make delicious vegan pancake mix banana bread! We’ve tested out the different mix flavors in our kitchen, and by far the star is the Black Sesame pancake mix. The nuttiness of the black sesame pairs so well with the sweetness of the banana. It is moist and delicious, and it is the best thing ever with a cup of black coffee. As is the case with all of our blog recipes, it’s super easy to make our vegan black sesame banana bread. All you need is: 2 very ripe bananas, 1 stick vegan butter at room temperature, 1/4 cup granulated sugar, 4 tablespoons egg substitute, 1 tablespoon vanilla extract and 1.5 cups pancake mix.

Step 1: Pre-heat the oven to 350 degrees and lightly butter or oil a 9x5” loaf pan. We drizzle some olive oil into the pan and rub it all over with a paper towel.

Step 2: Combine all the wet ingredients together—the room temperature vegan butter (we use the brand Earth Balance), sugar, egg substitute (we use the brand Just Egg) and vanilla extract. Mix the wet ingredients together.

Step 3: Mash the two bananas together. Combine the mashed bananas with the wet ingredients and mix.

Step 4: Combine the dry ingredients together—the sugar and the pancake mix.

Step 5: Fold in the wet mixture into the dry ingredients. Mix well, and don’t worry if there are lumps in the batter, you don’t have to thin it out.

Step 6: Bake for 35-40 minutes. Let it cool for 10 minutes at room temperature. Enjoy!
