Ube Banana Bite Pancakes

I don’t know about you, but I always seem to have too many bananas hanging around. I always wonder how I should best utilize these bananas before they overly ripen, other than ordering everyone in the house to scarf one down before it’s too late. Well, a great way—and an easy one!—of using those bananas is to incorporate them into our Whisk’d pancake mix! Welcome to the delicious world of Banana Bite Pancakes.

This recipe can work with any of our Whisk’d pancake mixes. The one pictured in this post uses our Yay Ube!! flavor. What’s great about these pancake bites is that the banana is warm and creamy inside, so you feel like you are eating a pancake with a banana pudding filling. It’s yummy and a great way to incorporate fruit into your vegan breakfast. Follow the simple instructions below if you’d like to make these Ube Banana Bite Pancakes using Whisk’d Yay Ube!!.

Step 1: Take a medium ripe banana and slice into small circles.

Step 2: Pour a 1/2 cup of Yay Ube!! pancake mix and a 1/2 cup of non dairy milk into a bowl. Whisk.

Step 3: Coat the banana slices in the pancake batter.

Step 4: Cook the coated banana slices over medium high heat, about 1-2 minutes per side.
