Sheet-Pan Ube Pancakes

Recently the New York Times featured a recipe for sheet-pan pancakes, and we at Whisk’d were like, this is genius!! Let’s be honest, sometimes it takes a few tries for the pancakes to come out well on a fry pan. At least for us, the first batch is always the worst. But with baking, everything comes out perfectly. And it’s so much easier too. All you have to do is mix the ingredients like you normally do, pour it into a sheet pan, put it in the oven for a couple of minutes, and boom, it’s done. If you have a bag of our Yay Ube!! Pancake Mix and want to try this new (and easy!) method of baking your sheet-pan ube pancakes, follow the steps below for our sheet-pan ube pancake recipe!

Ube Sheet-Pan Pancakes

Step 1: Preheat the oven to 450 degrees Fahrenheit.

Step 2: Mix the wet ingredients together - 1 egg, 3 tablespoons oil and 3/4 cup milk.

Step 3: Scoop out 1 cup of dry Yay Ube!! Pancake Mix. Pour the wet ingredients into the dry pancake mix. Mix well.

Step 4: Grease a baking sheet (11.75 inches x 11.75 inches) with about 1 tablespoons of melted butter.

Step 5: Pour the pancake mix into the baking sheet. Spread the mix around so that the whole surface of the baking sheet is covered. It’s ok if it seems a little thin.

Step 5: Bake for about 9 minutes.

Step 6: Remove from the oven and let cool for 3-5 minutes. Cut into squares to serve. Enjoy!!

*Tips: If you’re using a bigger sheet pan, you can double the recipe—2 eggs, 6 tablespoons, 1 1/2 cups milk, 2 cups of pancake mix. Bake longer for 12-15 minutes.
