Vegan Ube Pancakes

Our Yay Ube!! pancake mix is a real crowd pleaser. Whenever anyone tries samples of our ube pancakes, their response is instantly positive. You know that feeling you get when you bite into a giant piece of fluffy yellow birthday cake? The sensation is similar to that!

So you know ube is a popular flavor. The next, and very logical, question might be, what exactly is ube?? Ube is a purple yam originally from the Philippines. It has a lot in common with a sweet potato, obviously, but it tastes even sweeter, and it also has a slightly nutty, vanilla taste. That’s why it can conjure up feelings of cake, or at least it does for us!

Making our vegan ube pancakes is super easy. All you need is 1 cup of mix and 1 cup of vegan milk. Mix the dry and wet ingredients thoroughly. Heat a pan over the stovetop with either oil or butter. Once warm, ladle out the pancake batter onto the pan. Cook for about 1-2 minutes on each side—you’ll know when the pancake is ready once bubbles start forming on the surface. It’ll make about 6-8 pancakes.
